Asian-style spring and summer rolls are easy to create at home and can make a cooling supper on a hot evening. Use fresh herbs, such as mint, cilantro and basil and wrap With colorful, cooling vegetables -- such as shredded carrot, cucumber, or bean sprouts -- and vermicelli rice noodles. Add cooked, chilled seafood, tofu or chicken if desired. The method is easy: Soak rice paper rounds (found in many Asian markets and some supermarkets) in warm water until pliable. Lay one soaked round at a time onto a clean cutting board and arrange meat, vegetables and rice noodles in the middle of the rice paper round, leaving about half an inch on each end. Keep in mind that the rice paper rounds are transparent, so arrange fillings -- halved shrimp or tiny slices of radish, for example -- neatly as they will show through the finished roll. To roll, fold the bottom of rice paper round over the filling and start to roll tightly. Fold in ends and finish rolling. Cover with moist paper towels while you roll the rest.
